Honey is a fascinating substance, from the moment it has been harvested from the hives to being bottled. Its a natural food product that keeps evolving on its own in different environment that is being kept in. Like nature comes in different form, colour and taste. Honey is the same; there's the light honey and the dark honey, lighter taste and richer taste and even crystallised honey form.


Honey gets its colour from the pollen that a hive gathers to make it. A single hive can produce radically different colours of honey from season to season. The common wisdom is that light honeys taste mild while dark honeys are heavy and rich, but this isn't always true. Most honey on store shelves isn't particularly light or dark; it's more of a golden-orange colour.
